Quick & Easy Spicy Grilled Chicken Recipe
In this video, we prepare a grilled chicken dish with a spicy South Asian twist. As you’ll see, there’s always a way to simplify delicious recipes!
INGREDIENTS
-1/2 chicken (approximately 1 lb.) cut into 10-12 small pieces
-1/2 kiwi (ripe)
-5-6 skewer sticks
1st Marinade Ingredients:
-1 heaped tsp ginger paste
-1 heaped tsp garlic paste
-1 tsp chili powder
-1 tsp chili flakes or 1/2 tsp coarse black pepper
-1 tbsp crushed cumin seeds
-1 tbsp crushed coriander seeds
-1/2 tsp dried oregano leaves (rub between your palms into a powdery consistency)
2nd Marinade Ingredients:
-1 tsp green chili paste (optional - depends on if you want this spicy)
-1/4 bunch very fine chopped cilantro leaves
-6-8 mint leaves, very fine chopped
-1/4 cup clarified butter (ghee) or shortening
STEPS
-Mash the kiwi fine and rub into chicken pieces using your hands (always the best utensil - but make sure to wash them thoroughly after handling raw chicken)
-Mix the 1st marinade ingredients together, and apply to the chicken pieces using your hands. Leave the chicken to marinade for 3-4 hours or overnight in refrigerator
-Now, mix the 2nd marinade ingredients together with the chicken pieces
-Place chicken on skewers and cook on a grill (or in a stovetop cooking pan), turning sides occasionally for a total cook time between 15-20 mins
